Fresh Peach Fritters

  • 2 cups fresh peaches, chopped
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk
  • 1 egg
  • Vegetable oil for frying

Instructions

  1. Prep the peaches by washing and chopping them into bite-sized chunks.
  2. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, salt, and cinnamon.
  3. Combine the wet ingredients in another bowl: whisk milk and egg together until fluffy.
  4. Combine the wet and dry mixtures gently, being careful not to over-mix.
  5. Heat oil in a large pot until it reaches 350°F (175°C).
  6. Fry the fritters, using about 2 tablespoons of batter for each, cooking for 2-3 minutes on each side.
  7. Drain the fritters on paper towels to remove excess oil.
  8. Serve warm, optionally dusted with powdered sugar or with a dollop of whipped cream.

Notes
