A delightful pie bursting with summer vegetables and cheese, all in a flaky crust — a perfect dish for family gatherings.

  • 2 cups zucchini, sliced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • 3 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pie crust (store-bought or homemade)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the pie crust in your pie dish, ensuring to poke holes in the bottom.
  3. Sauté the onions and garlic in olive oil until translucent (about 5-7 minutes).
  4. Add the zucchini and sweet corn to the skillet and sauté for another 5-7 minutes.
  5. Mix the eggs, milk, salt, and pepper in a bowl, then stir in the sautéed veggies and cheese.
  6. Fill the pie crust with the vegetable and cheese mixture.
  7. Bake for about 30-35 minutes until golden brown.
  8. Cool the pie for 10-15 minutes before serving.
