Tortellini Pasta Salad

A vibrant and hearty Tortellini Pasta Salad, perfect for gatherings and filled with comforting flavors inspired by childhood memories.

Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and add salt.
  2. Add the cheese tortellini and cook according to package instructions (about 3-5 minutes) until they float to the surface.
  3. Drain the tortellini and rinse under cool water.
  4. Chop the cherry tomatoes, cucumber, red onion, and black olives while the tortellini cools.
  5. Combine the cooled tortellini, halved cherry tomatoes, diced cucumber, red onion, and black olives in a large mixing bowl.
  6. Add Italian dressing and chopped fresh basil, stirring gently to coat.
  7. Season with salt and pepper to taste and mix again gently.
  8. Let the salad sit for 30 minutes before serving for flavors to meld.

Notes

Letting the salad sit before serving enhances the flavor. This salad can be made ahead of time and tastes better the next day.
