Ingredients

  • Kohlrabi (2 medium-sized)
  • Olive oil (2 tablespoons)
  • Salt (1 teaspoon)
  • Black pepper (½ teaspoon)
  • Fresh rosemary (1 tablespoon, chopped)
  • Shallots (1 medium, thinly sliced)
  • Balsamic vinegar (optional, for drizzling)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep the kohlrabi by trimming the leaves and peeling the outer skin, then cut into bite-sized cubes.
  3. Mix the kohlrabi cubes with olive oil, salt, pepper, and rosemary in a large bowl.
  4. Arrange the seasoned kohlrabi evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 25-30 minutes, tossing halfway through.
  6. Final touches: Sprinkle shallots on top in the last few minutes of roasting.
