Vegan Potimarron and Lentil Parmentier

A comforting and hearty Vegan Potimarron and Lentil Parmentier packed with rich flavors and wholesome ingredients.

  • 1 medium potimarron (or butternut squash), peeled and diced
  • 1 cup green or brown lentils, rinsed
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or parsley) for garnish

Instructions

  1. Prep the potimarron by peeling and dicing it into bite-sized pieces.
  2. Sauté the aromatics by heating olive oil in a large pot, adding onion, and cooking for about 5 minutes.
  3. Add the garlic and mushrooms, cooking for another 5 minutes until the mushrooms are caramelized.
  4. Incorporate the rinsed lentils and diced potimarron, stirring to meld flavors.
  5. Pour in the vegetable broth and bring to a gentle simmer, cooking for about 20-25 minutes until lentils are tender.
  6. Season to perfection with salt and pepper.
  7. Assemble the parmentier by transferring the mixture to a baking dish; mash some potimarron as a topping, if desired.
  8. Bake for 15-20 minutes at 400°F (200°C) until the top is golden and crisp.
  9. Garnish and serve with fresh herbs.

Notes

This dish can be made ahead of time and tastes even better the next day. Store leftovers in an airtight container for up to 3 days.
