Vegetable and Bean Chili

A cozy and comforting vegetable and bean chili, perfect for chilly days and bringing people together.

Ingredients

  • 1 can black beans
  • 1 can kidney beans
  • 1 can diced tomatoes
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 tbsp chili powder
  • 1 tsp cumin

Instructions

  1. Prep your veggies: Wash and dice your zucchini, bell pepper, and onion.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat and add diced onion. Sauté for 3-5 minutes.
  3. Add the bell pepper and zucchini: Toss in and sauté for an additional 5 minutes.
  4. Spice it up: Add chili powder and cumin, mixing them in for about a minute.
  5. Incorporate the beans and tomatoes: Drain and rinse black and kidney beans, then add them with diced tomatoes.
  6. Simmer away: Bring to a gentle simmer and cover for 20-30 minutes.
  7. Taste and adjust: Sample your chili and add salt, pepper, or hot sauce as desired.
  8. Serve up: Ladle chili into bowls and top with avocado, cilantro, and lime.
