Turkey or Beef Stuffed Bell Peppers

A hearty and comforting recipe for stuffed bell peppers filled with ground turkey or beef, rice, marinara, and topped with melted mozzarella.

  • 4 bell peppers (red, yellow, or green)
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large skillet over medium heat, add the ground beef or turkey and cook until browned (about 5-7 minutes).
  4. Lower the heat, stir in the cooked rice, marinara sauce, and Italian seasoning, and simmer for 5 minutes.
  5. Carefully spoon the meat mixture into each bell pepper.
  6. Place the stuffed peppers in a baking dish and sprinkle with mozzarella cheese.
  7. Cover the dish with foil and bake for 25-30 minutes until tender.
  8. Allow to cool for a few minutes before serving.

Notes

Feel free to use zucchini as a lower-carb alternative to bell peppers. These can also be frozen for up to 3 months.
