Zapple Pie

A delightful twist on classic apple pie made with zucchini, offering all the nostalgic flavors without the excess.

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup butter or lard
  • 67 tablespoons cold water
  • 6 cups peeled, quartered, cored, and thinly sliced zucchini
  • 1/2 cup lemon juice
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 1/4 cup light or dark brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 2 tablespoons instant tapioca
  • 1 tablespoon granulated sugar, reserved until end of baking

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine 2 cups all-purpose flour and 1 teaspoon salt in a mixing bowl. Add 2/3 cup butter or lard, mixing until it resembles coarse crumbs. Gradually add 6-7 tablespoons of cold water until the dough comes together.
  3. Wrap the dough in plastic wrap, flatten it into a disc, and chill in the fridge for about 30 minutes.
  4. Peel, quarter, core, and thinly slice 6 cups of zucchini. Toss with 1/2 cup lemon juice, pinch of salt, 1/2 cup granulated sugar, 1/4 cup brown sugar, 1 1/2 teaspoons ground cinnamon, 1/8 teaspoon nutmeg, 1/8 teaspoon ginger, and 2 tablespoons instant tapioca. Let sit for 10 minutes.
  5. Roll out about 2/3 of the dough on a floured surface to fit into your pie plate.
  6. Transfer the rolled-out dough into the pie plate and spoon the zucchini filling into the crust.
  7. Cover the filling with rolled-out remaining dough. Cut slits in the top crust for steam to escape, and sprinkle 1 tablespoon granulated sugar over the top.
  8. Bake for 10 minutes at 425°F (220°C), then reduce to 350°F (175°C) and continue baking for 35-40 minutes.
  9. Cool the pie for at least 30 minutes before slicing.

Notes

Serve with vanilla ice cream or whipped cream for added creaminess. The pie is delicious warm, at room temperature, or cold.
