Courgettes Bolognaise

A delightful twist on a classic Italian Bolognese, featuring fresh zucchinis for added texture and flavor.

  • 2 medium zucchinis, sliced or diced
  • 1 cup ground beef or turkey
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup tomato sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Parmesan cheese, optional for serving

Instructions

  1. Prep your zucchini by washing and slicing them into half-moons or dicing them.
  2. Heat a large skillet over medium heat and drizzle in olive oil. Add the chopped onion and sauté for 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute.
  4. Increase the heat to medium-high and add the ground beef or turkey. Cook until browned, about 5-7 minutes.
  5. Toss the zucchini into the skillet with the meat and onion mixture. Cook for about 5 minutes.
  6. Pour in the diced tomatoes and tomato sauce, then sprinkle in the Italian seasoning. Let simmer for about 15 minutes.
  7. Taste and adjust the seasoning as needed.
  8. Serve your Bolognaise over pasta, rice, or zoodles, and garnish as desired.

Notes

Feel free to swap zucchini with yellow squash or eggplant. For a vegan twist, substitute meat with lentils or plant-based crumbles.
