Zucchini Brownies

Rich, fudgy brownies made with shredded zucchini for added moisture and a hidden health boost.

  • 1 cup shredded zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by greasing or lining it with parchment paper.
  3. Shred the zucchini using a box grater or food processor.
  4. Mix the wet ingredients in a bowl: vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  5. Combine the dry ingredients: flour, cocoa powder, baking soda, and salt, in a separate bowl.
  6. Add the dry ingredients to the wet mixture and stir until just combined.
  7. Fold in the shredded zucchini and chocolate chips (if using).
  8. Pour the batter into the prepared pan.
  9. Bake for 25-30 minutes, until a toothpick inserted comes out with a few moist crumbs.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Enjoy with a scoop of vanilla ice cream or a drizzle of melted chocolate!
