Zucchini Onion Pie

A comforting and delicious pie made with grated zucchinis, onions, and cheese, reminiscent of family gatherings and warm kitchen memories.

Ingredients

  • 2 medium zucchinis, grated
  • 1 onion, chopped
  • 3 eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or oregano
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchinis and squeeze out excess moisture.
  3. Sauté the onions in olive oil until translucent.
  4. Combine all ingredients in a mixing bowl until well incorporated.
  5. Pour the mixture into a greased pie or tart pan.
  6. Bake for about 45-50 minutes until golden brown.

Notes

This pie can be made ahead and stored in the fridge for up to 3-4 days. It also freezes well for up to 2 months.
